Aloo Bhindi Sabji

If you are in a mood of cooking Bhindi (Okra) differently, without using onion-garlic, probably this is the recipe for you. This is dry based dish, perfect for dinner. A simple and easy sabzi which can be made ready in 15 minutes. Normally in Indian homes this vegetable dish is made along with Dal.



Ingredients :

Bhindi (Lady's finger)- around 15-20 pieces
Potato - 2 large, cut into cubed
Tomato - 1, big, cut into chunk
Asofetida - 2 pinch
Ginger - 1 tsp.
Turmeric Powder - 1/2 tsp
Chilli Powder - 1/2 tsp
Coriander powder - 1/2 tsp.
Dry Mango powder/ Amchoor powder - 1 tsp.
Cumin powder - 1/2 tsp.
Cumin seeds - 1 tsp.
Salt to taste
Chopped Green chilli for garnishing

Method :

Wash fresh Bhindi in plenty of running water and dry it thoroughly with the kitchen towel. Cut the tops and tails sliced into 1" long.

Heat oil in a pan, deep fry the bhindi and popatoes until slightly brown and keep aside.

Heat few teaspoon of oil, add cumin seeds and asofetida, when seeds cracked then add turmeric powder, red chilli powder, cumin-coriander powder, poatoes, salt and half cup of water. Mix well and cover the pan with the lid, turn the heat to medium-low for 5 minutes.

Add fried bhindi and cook for 5 mins without lid. Keep stirring the okra and potatoes so that it doesn’t stick to the pan.

Now add chopped tomato, amchoor powder and mix carefully without mashing bhindi or potatoes.

Garnish with chopped green chilli.
 

Enjoy hot with fresh roti or paratha.
