One of the easiest and fastest ways is to eat it on an open faced sandwich. Potato Sandwich is a yummy and nutritious ,healthy snack that can be made up in minutes. It is great for breakfast, brunch , lunchboxes and even for traveling. A perfect little snack or light lunch if paired with some fresh fruit and yogurt.
Ingredients :
For the stuffing ~
Potato -3
Onion - 1, medium sized
Green chilli -2
garlic - 2 pods, finely chopped
Turmeric powder - a pinch
Chilli powder - 1/4 tsp or as required
Salt as required
Oil - 1 tbsp
For the seasoning ~
Bengali Five-Spice (Panch Phoron) - 1 tsp (Nigella seeds,black mustard seeds,fenugreek seeds,fennel seeds,cumin seeds)
Method :
Mash the potato using the back of a spoon. If there are small lumps that is fine. Keep aside.
Heat oil and add the ingredients for seasoning. When seeds are splutter, add chopped garlic, onions and green chillie . Saute well.
Then add chopped potatoes, chilli powder, turmeric powder and salt. Cook covered till done. Do not forget to mix it in between to prevent it from getting burnt.
Your stuffing is ready.
Ingredients :

Sandwich bread - 2
Onion - 1, finely chopped
Tomato - 1, chopped
Salt and Pepper powder to taste
Method :
Pre-heat oven to 350 degrees.
Place the Bread slices flat on a baking sheet.
Bake/toast them in the oven till they are light golden.
Flip them around and let them toast on the other side. The Bread should be very crisp. Repeat the process for the other breads.
Add a big spoonful of potato curry on top of one of the bread. Spread evenly and then place the other bread over the top.
Spread chopped onion, tomato, salt and pepper powder.
Open faced potato sandwich are ready to served hot.
