Vegetable kathi roll is chapathi roll filled with spicy vegetable filling and green chutney. Kathi rolls are great for lunch boxes or picnics. The filling can be altered according to your choice of paneer and chicken also. It came out really well and my family enjoyed it very much. I hope everyone else like it too. Its healthy meal for kids and I hope you enjoy it.
Method :
Mix salt, wheat flour and maida. Add milk slowly add water to form a soft yet slightly firm dough. Cover and let it rest till you get the stuffing ready..
Heat oil, add onions and saute until golden brown.Add ginger chilli paste and saute for a min then add all the veggies, saute for 3mins or until cooked till the
veggies are soft.
Add turmeric pwd, kitchen king masala and chaat masala pwd and combine. Turn off heat. Add the lemon juice and salt to taste and mix. Keep aside..
To make it as a wrap:
Pinch a lemon sized ball from the dough and flatten it like we do for chapathis. Dust flour if needed.
Heat a iron tawa and once its hot, place a paratha and let it cook lightly on both sides. Prepare all the rotis and place them in a casserole to keep soft.
At the time of serving, add little oil and toast the prepared parathas. Apply green chutney on one side of the chapathi then spread a tbsp of vegetable filling in the middle of the roti and sprinkle the chopped onion filling over it and roll the roti tightly to form a roll.
