Vegetable chop is one of the most perfect snacks in tea time.
Ingredients :
Potato - 2 medium
Carrot - 1 large
Beetroot - 2 small
Peas - 1/2 cup
Ginger - 1 tbsp
Groundnuts - 2 tbsp
Green chilli - 2 (chopped)
Cumin-coriander powder - 1 tsp.
Sugar - 1/2 tsp
Salt - To taste
White flour - 1/2 cup
Bread Crumbs/crashed corn falkes - 1/2 cup
White Oil - 1 cup (for deep frying)
Method :
Mix the white flour with water to make a batter and set aside.
Wash and chop all the vegetables into even size pieces.
Boil the vegetables,cool, smash and add the salt and mix well.
Heat oil in a pan, fry the onions till golden brown.
Add the ginger paste,green chilli, cumin-coriander powder and saute for 2-3 minutes.
Add the smashed vegetables, fry for 2 minutes, remove from heat and add the peanuts.
Make chop-size dumplings of the vegetable mixture using your hands & dip in besan mix to form a thin layer, coat with crashed corn flakes and keep aside.
Heat 4-5 tbsp oil in a pan, deep fry each ball until golden brown and drain on kitchen towel.
Serve hot with onion and tomato sauce.
