Combo Veg Dish

Soyabean Paneer Pulao

This pulao is a special recipe of Paneer and Soya bean. And this delicious rice dish is an Indian favorite and reserves a special place in party and in special occasions.  The combination of mutter and paneer, with masala ingredients gives rich aroma.

Ingredients :

Soyabean Pods ~ 12-15
Paneer/cottage cheese ~ 1 cup
Basmati Rice ~ 2 cups
Cinnamon ~ 2
Cardamom ~ 2
Cloves ~ 3
Bay leaves ~ 2
Nutmeg-Mace Powder ~ 1/2 tsp.
Turmeric Powder ~ 1 tsp.
Sugar : 2 tbsp.
Salt to taste
Clarified Butter / Ghee : 1 tbsp
Refine Oil ~ 1 tbsp.

Method :

Soak the soya granules in 1 cup of hot water for 15 to 20 minutes,drain and keep aside. Wash the rice and drain the water and keep aside.

Heat oil and ghee in a pressure cooker pan, add bay leaves, cinnamon, cloves, cardamom, when seeds are splutter then add paneer, soyabeans, turmeric powder, salt, sugar and mix well.

Now add 5 cups of warm water and pressure cook till rice cooks well.

Serve hot with Shahi Paneer Masal & Potato fry.

Shahi Paneer Masala

Shahi Paneer Masala is a very popular and rich vegetarian recipe.Shahi Paneer is considered to be a mainstay dish especially in the Northern parts of India. Shahi which means 'Royal' and Paneer when translated is ' Cottage Cheese' gives Shahi Paneer a royal feel to it. However, Shahi Paneer is a famous dish liked by many and is available in almost all the hotels, restaurants and roadside eateries. 'Shahi Paneer' is undoubtedly one of the most popular dishes originating from India. Presented below is the cooking method to prepare the famous Indian dish of Shahi Paneer along with the ingredients required.  It is typically eaten with Roti, Chappati or other Indian breads, pulao.

Ingredients :

Paneer (cottage cheese) ~ 200 gms
For Marination :
Yogurt/Curd ~ 3/4 cup
Red Chilli Powder ~ 1/2 tsp.
Tandoor Masala ~ 1/4 cup
Amchoor (dry mango) Powder ~ 1/4 tsp.
Garam MAsala Powder ~ 1/2 tsp.
A pinch Salt

For Gravy :
Cashew Powder ~ 1 tbsp.
Ginger Paste ~ 1 tsp.
Tomato Sauce / Puree ~ 1/2 cup
Green Chilli ~ 1, chopped
Cardamom Powder ~ 1/4 tsp.
Sugar ~ 1 tsp.
Shahi Paneer Masala ~ 11/2 tsp.
Kasoori Methi ~ 2 tsp
Salt to taste

Method :

Cut the paneer in small size and marinate in yogurt, adding all the ingredients mentioned in marination, set aside for
2-3 hrs in fridge.
Heat oil in a tawa, add ginger paste, chopped green chilli, cashew powder, cardamom powder and fry for 4-5 mins.
Add tomato puree/sauce and cook till oil starts seperating, now add marinated yogurt, cook for another 5-7 mins.
Then add shahi paneer masala, sugar, salt, once it starts to boil, add kasoori methi, milk and paneer pieces and boil
for 5 mins.
Serve hot with pulao, paratha/roti.
