Spinach saute with garlic is a classic preparation. This is one of my favorite side dish. Spinach has a high nutritional value and is extremely rich in antioxidants, especially when fresh, steamed, or quickly boiled.
It is a rich source of vitamin A (and especially high in lutein), vitamin C, vitamin E, vitamin K, magnesium, manganese, f iron, vitamin B2, calcium, potassium, vitamin B6, folic acid, copper, protein, phosphorus, zinc, niacin, selenium and omega-3 fatty acids.
Ingredients :
Spinach : 1, banch
Onion : 1, small
Garlic : 4-5 pieces
Poppy Seeds : 1 tsp.
Green Chilli : 1 piece
salt to taste
Method :
Wash and cut the fresh spinach in small size.
Heat one cup water in a kadai, add spinach, boil for 5 mins. Keep aside.
Heat oil in a kadai, add green chilli, poppy seeds, when seeds splutter then add garlic in a large skillet or saute pan and set it over medium heat, until it is soft and translucent.
Now add boiled spinach, salt and saute for 5-7 mins. Raise the heat to medium-high and sauté the spinach, tossing it frequently. When spinach give fine aroma then it is done well.
Serve hot with plain rice.
